Vegan Protein Bars

Delicious vegan protein bars πŸ˜πŸ˜‹ I’m going full vegan for this week and challenging my body to be at its best! I’ve always said being vegan would be too hard and I feel strange and not ever full without meat πŸ˜‚, but it’s actually not that difficult and I FEEL so much better! I’m tired of mindlessly eating and trusting something that [eventually] can do harm to my body. πŸ™…πŸ½ Plus - these have chocolate on them so of course I’m totally IN! πŸ˜‹πŸ’šπŸ« 
INGREDIENTS: 
1 cup raw almonds, 1/4 tsp sea salt, 1 1/2 cups rolled oats, 5 ounces plant-based vanilla protein powder (I used 1 scoop organic vegan chocolate protein powder for this), 1/3 cup maple syrup, 1/4 cup dairy free chocolate chips (optional). DIRECTIONS: 1. Prepare an 8x8 inch square pan by lining with parchment paper or cooking spray.  2. Measure out 1/4 cup of the almonds, chop, and set aside for topping. 3. In a food processor, pour in the remaining 3/4 cup of almonds and the salt. Process until you have almond butter (several minutes). 4. Add the oats, protein powder, and maple syrup, and process until smooth. (I ended up adding 1 tsp of almond milk to get the mixture to stick together. 5. Press the mixture into the pan using the back of the spoon. Top with chopped almonds, pressing those into the bars. 6. Place the chocolate chips in a small glass bowl, and microwave until melted. Drizzle chocolate over the bars and allow to set in fridge for 20 mins before cutting. 7. Store uneaten bars in an airtight container the fridge. Grab and go!
